Fall & Winter 2011-12
Roast Beef Dinner: Slow-roasted loin of beef (served medium-rare) with mushroom gravy, herbed-roasted red potatoes & vegetable.
Portobello Al Forno: Portabello mushroom caps brushed with olive oil and garlic & roasted. Layered with three cheeses, sweet Italian sausage crumbles, and fresh pesto over pasta with marinara. If you prefer a vegetarian option, this dish can be made without the Italian sausage.
Chicken-Noodle (or rice) Soup: Made with chicken, vegetables, cilantro, your choice of rice or noodles, & sliced avocado. Great to keep the common cold at bay!
Traditional Baked Chicken or Turkey: Fresh-herbs and spices baked with chicken or turkey. Served with homemade stuffing & fresh cranberry sauce.
SuperChef's Traditional Meatloaf: Made with ground beef, onion, green pepper, and plenty of spices. Served with gruyere cheese-scalloped potatoes with bacon & sweet onions & vegetables. If desired, meatloaf can be made with ground turkey &/or bulgar to add a healthier option.
Beef & Portobello Mushroom Stroganoff: Beef Stroganoff tops seared flank steak with a rich-tasting sauce made with a touch of cognac, reduced-fat sour cream and plenty of portobello mushrooms. Served over egg noodles.
BBQ Pork Chops with Cheddar-Broccoli Crepes:
Sweet & tangy, tender bbq'd pork chops served with steamed broccoli served with crepes topped with a sharp, slightly spicy extra sharp cheddar cheese sauce.
Crunchy Chicken Tacos: Baked corn tortilla shells stuffed with spicy chicken mixture, shredded sharp cheddar cheese, and SuperChef's own fresh, chunky guacamole. Served with your choice of re-fried pinto beans or Arroz Rojo.
Loaded Twice-Baked Potatoes: Made with your choice of protein (spicy lean ground beef or turkey, or kielbasa), broccoli, (reduced-fat) sour cream & cheddar cheese. Can be made vegetarian-style.
Italian Sausage & Cannellini Bean Stew: Made with a mouth-watering combination of Italian Sausage, cannellini beans, vegetables, aromatics & herbs.
Lime-Jalapeno Chicken: Marinated chicken on warm tortillas with black beans, or serve hot or cold on toasted rolls with roasted garlic. Both come with your choice of chunky guacamole or pico de gallo on the side.
Creamy Butternut & Ham Soup: A thick, hearty soup made with butternut squash, sweet onions, tender chunks of ham & a light cream.
Healthier Chicken-Fried Steak & Gravy: A low-calorie, low-fat & low-sodium, healthy comfort food option than the original. Served over creamy mashed potatoes with homemade gravy & vegetable.
Chili: Made with your choice of ground beef, ground turkey, or breast of chicken in SuperChef's very own spicy chili sauce. Served with avocado and shredded cheese. Can be made with a slight hot kick or without. Also, can be made vegetarian-style with beans, sweet potatoes, and other vegetables.
Chicken Thigh Fricasse with Mushrooms: Tender bone-in chicken thighs simmered in white wine with fresh garlic, mushrooms and herbs, olives, and sliced cherry tomatoes with a bit of chili flake served over buttered egg noodles or rice. Can omit the chili flake.
Marinated Steak: SuperChef's very own marinades over juicy steaks. Served with sesame toasted sweet potato oven fries and vegetable.
Chicken Parmesan: Chicken breast pounded thin and rolled with mozzarella, fresh basil and tomato and baked in a marinara sauce. Served with a side of pasta and marinara.
Marinated BBQ'd Pulled Pork: Pork butt marinated in herbs, sauce, and aromatics and slow-roasted to bring out the tenderest and best flavors, add SuperChef's BBQ sauce, and pulled apart with a fork. Served with a vegetable side and rolls.

Eggplant Napoleon Supreme: Sliced roasted eggplant & zucchini stacked with fresh pesto, tomato and mozzarella slices over mixed greens with pasta.
Wild-Rice and Mushroom Soup: A creamy base soup of wild rice and mushrooms, and served with a crusty bread.
Broccoli & Garlic Penne: Roasted garlic sauteed with steamed broccoli over your choice of penne (including whole wheat). Can add shrimp or chicken.
Chile Rellenos: Peppers stuffed with cheese, battered & fried, or not (your choice) & served with your choice of Spanish rice or re-fried pinto beans, and SuperChef's own fresh, chunky pico de gallo.
Eggplant Parmesan: Thin-sliced fried eggplant stacked with marinara, fresh tomato & basil, roasted garlic and mozzarella & baked. Served with a side of pasta with marinara.
Basil-Walnut Pesto Pasta: Made with toasted walnuts, roasted garlic, basil & cherry tomatoes over your choice of pasta. Can add shrimp or chicken.
Black-Bean Smothered Baked Sweet Potatoes: There's no need for butter with this heart healthy & hearty meal of simmered herbs, aromatics, and black beans over sweet potato. Topped with reduced-fat sour cream and cilantro.

Traditional Fish & Chips: Flaky white fish beer-battered and fried. Served with spicy oven fries and corn.
Crab Cakes: Fresh fried crab cakes served with homemade tartar sauce and lemon wedges over sauteed spinach and garlic.
Pasta with Shrimp & Peas: Succulent shrimp sauteed with peas in a garlic-cream sauce over pasta. Topped with fresh Asiago cheese.
Tuna Steaks with Tomato-Caper Sauce: A heart healthy and satisfying meal of tuna steaks smothered in an aromatic red sauce reduction. Served with a vegetable side & bread.
Baked Bay Scallops: Tender Maine bay scallops baked with a tasty combination of herbs, a little spice, butter and crumbs. Served with homemade tartar sauce and lemon wedges with vegetable.
Tangy-Garlic Salmon: Marinated in Italian herbs and garlic then pan-fried and baked to finish. Served over rice with a vegetable side.
Thai Coconut Shrimp Soup: A fresh, satisfying and aromatic Thai-inspired meal perfect to take the chill off of your Fall and Winter. Good enough for special occasions or just because. Can be made with chicken instead of shrimp.
